April 5, 2017I’m the type of person who is always down for a good dip. But spinach artichoke dip is one of my favorite’s! While we at Trader Joe’s grocery shopping, Steve put two bags of frozen artichokes into the cart. I think he realized how confused I was by my facial expression, so he informed me that he was going to make homemade spinach artichoke dip and I instantly had a smile. It’s the little things that make you happy in life, right? That night, Steve found multiple recipes for the dip and picked out what he thought was good from each. And let me tell you this dip was amazing! So here is the recipe:
Ingredients:
- 8 oz Cream Cheese (room temperature)
- 1 Cup Light Mayonnaise (trying to keep it healthy 🙂
- ½ Cup Light Sour Cream
- ½ Cup Mozzarella Cheese
- 1 Cup Parmesan Cheese
- 2 Green Onions – Chopped
- 1 Clove of Garlic
- ½ Teaspoon Salt
- ½ Teaspoon Fresh Ground Pepper
- ½ Teaspoon Worcestershire Sauce
- ½ Teaspoon Tabasco
- 1 and ½ Cups of Frozen Spinach
- 24 oz Frozen Artichoke Hearts
Directions:
- Run frozen artichokes under water for about 5 minutes in a strainer
- Transfer the artichokes to a microwaveable bowl and microwave for 4 minutes, then drain
- Microwave frozen spinach for about 2 minutes until, it is somewhat thawed
- Whisk together all other ingredients in a big bowl
- Add Spinach and Artichokes to bowl, mix together
- Transfer all ingredients to an oven safe dish
- Bake at 375 degrees for about 20 minutes, or until the top is golden brown and the center is warm
